Cheesy Jalapeño Cornbread
A slightly spicy, cheesy bread with a hint of sweetness from cornmeal. Perfect as a side for chili, soups, or BBQ dishes.
Ingredients:
- 1 cup (240 ml) warm milk
- 1/4 cup (60 g) butter, softened
- 2 cups (240 g) bread flour
- 1/2 cup (60 g) cornmeal
- 1 teaspoon (6 g) salt
- 2 teaspoons (12 g) sugar
- 2 1/4 teaspoons (7 g) active dry yeast
- 1 cup (100 g) shredded cheddar cheese
- 1-2 jalapeños, finely chopped
Instructions:
- Add warm milk and butter to the bread pan.
- Layer bread flour, cornmeal, salt, and sugar. Make a small well and add yeast.
- Close the lid, select “Basic” setting with medium crust, and start.
- When the machine signals, add cheese and jalapeños.
- Once baked, remove loaf and cool slightly before slicing.

Coconut Pineapple Bread

- 2 tablespoons (30 g) butter, softened
- 3 cups (360 g) bread flour
- 1/4 cup (50 g) sugar
- 1 teaspoon (6 g) salt
- 2 1/4 teaspoons (7 g) active dry yeast
- 1/2 cup (50 g) shredded coconut
- 1/2 cup (80 g) diced pineapple, drained
Instructions:
- Add warm milk and butter to the bread pan.
- Layer bread flour, sugar, and salt on top. Make a small well and add yeast.
- Close the lid, select “Sweet” setting with medium crust, and start.
- When prompted, fold in shredded coconut and pineapple.
- Allow the bread maker to finish the baking cycle. Remove loaf and cool before slicing.
