Ingredients
  

  • 2 –3 medium cucumbers
  • 1 package 8 oz garlic hummus or roasted red pepper hummus
  • 1 jar 7 oz pickled roasted red peppers or sun-dried tomatoes
  • 1 package 4 oz feta cheese crumbles

Instructions
 

  • Prepare the Cucumbers: Begin by thoroughly washing your cucumbers under cold running water to remove any dirt or residue.
    Pat them dry with a clean kitchen towel or paper towel.
    Using a sharp knife and a sturdy cutting board, slice each cucumber lengthwise into thin, even slices, about 1/8 inch thick.
    The slices should be long enough to roll easily, yet thin enough to be flexible.
    If you prefer, you can use a mandoline slicer for perfectly uniform slices.
    Place the cucumber slices on a large plate or tray, arranging them in a single layer so they don’t stick together.
  • Dice the Pickled Roasted Red Peppers: Open your jar of pickled roasted red peppers and carefully remove the peppers with a fork or spoon.
    Pat them dry slightly with paper towels to remove excess liquid. Using a sharp knife, dice the peppers into small, uniform pieces.
    These will add bursts of tangy, sweet flavor to every bite.
    Set the diced peppers aside in a small bowl, ready to sprinkle over the hummus later.
    If you are using sun-dried tomatoes instead, chop them finely to ensure they integrate well with the hummus.
  • Spread the Hummus: Spoon out a generous amount of your garlic hummus (or roasted red pepper hummus) into a small bowl.
    Using a butter knife or small spatula, spread a thin, even layer of hummus over the surface of each cucumber slice.
    Make sure to cover the entire length and width, leaving just a tiny edge at the end to make rolling easier.
    The hummus not only provides creaminess but also acts as a sticky layer to help hold the roll together.
  • Sprinkle the Feta Cheese: Take a small handful of feta cheese crumbles and evenly sprinkle them over the hummus-covered cucumber slices. The feta adds a salty, creamy contrast that complements the crisp cucumber and the hummus. Be careful not to overload the slices, as too much filling can make rolling difficult.
  • Add the Diced Peppers: Sprinkle the diced pickled roasted red peppers (or sun-dried tomatoes) evenly on top of the hummus and feta layer. These vibrant pieces add a pop of color and tangy sweetness, making the roll-ups visually appealing and bursting with flavor.
  • Roll the Cucumbers: Starting at one end of each cucumber slice, carefully roll it over itself, keeping the fillings inside.
    Roll gently but firmly, ensuring the ingredients stay in place.
    Adjust the thickness and tightness of the roll so that it’s easy to handle and will hold together on a plate.
  • Secure the Rolls: To prevent the cucumber rolls from unrolling, insert a short bamboo skewer through the center of each roll.
    This also makes them easy to serve as bite-sized appetizers.
    Arrange the finished rolls on a serving platter, standing upright if possible, to showcase their colorful layers.
  • Serve or Store: Serve immediately for the best texture and flavor.
    If preparing in advance, cover the rolls lightly with plastic wrap and refrigerate for up to 24 hours.
    The cucumber may release some water over time, so it’s best to assemble them shortly before serving for the crispiest result.
  • Optional Garnishes: For an added touch, drizzle a little olive oil over the rolls or sprinkle fresh herbs like parsley, dill, or chives on top.
    This enhances both the visual appeal and flavor, making these roll-ups perfect for entertaining or meal prep.
