Equipment

  • 1 Microplane or Fine Grater (optional) – for finely shredding carrots if not using a processor

Ingredients
  

  • cups 120 g old-fashioned rolled oats
  • 2 medium carrots about 250 g / 9 oz, peeled and chopped into chunks
  • ½ cup 100 g shelled hemp seeds
  • 5 Medjool dates 75 g, pitted
  • 3 tablespoons 27 g raisins
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 2 tablespoons 32 g almond butter
  • cup 25 g unsweetened shredded coconut (optional, for coating)

Instructions
 

  • Prepare the Base Ingredients: Place the oats, chopped carrots, hemp seeds, pitted dates, and raisins into the bowl of a food processor. These form the foundation of the bliss balls, combining fiber, natural sweetness, and plant-based protein.
  • Add Flavor and Binding Elements: Sprinkle in the cinnamon, nutmeg, and ginger, then add the almond butter. The spices bring warm, carrot cake-like notes while the almond butter helps bind the mixture into a dough-like texture.
  • Blend Until Well Combined: Pulse the mixture for 2 to 3 minutes, scraping down the sides as needed. Continue processing until the mixture becomes fine and sticky, with visible specks of carrot but no large chunks.
  • Form into Bite-Sized Balls: Scoop out about a tablespoon of the mixture at a time and roll it between your palms to form small balls. You should get around 22 bliss balls from this batch.
  • Optional Coconut Coating: If desired, roll each ball in shredded coconut to add extra texture and flavor. This also gives them a finished, bakery-style look.
  • Chill to Set: Transfer the bliss balls to an airtight container and refrigerate for at least 1 to 2 hours to allow them to firm up. Once set, they're ready to enjoy!

Notes

  • Make it nut-free: Swap almond butter with sunflower seed butter or tahini for an allergy-friendly version that’s also school-safe.
  • Carrot tip: No need to grate the carrots beforehand—just peel and chop before adding to the food processor.
  • Date substitution: If using regular (non-Medjool) dates, soak them in hot water for 10 minutes to soften before blending.
  • Storage: Store the bliss balls in a sealed container in the refrigerator for up to 5 days. For longer storage, freeze for up to 1 month.
  • Customize it: Feel free to mix in extras like chopped walnuts, flaxseed, or a scoop of protein powder for added nutrition.
  • Texture control: If the mixture feels too dry to roll, add a small spoonful of water or a bit more almond butter. If too wet, mix in a few extra oats.
