1 Citrus juicer (optional but recommended)
- 2 cups cooked chicken shredded, sliced, or diced
- 1 ripe avocado diced or sliced
- ½ cup shredded cheddar cheese or mozzarella
- ¼ cup sour cream mayonnaise, or your preferred creamy sauce
- 2 tablespoons fresh cilantro finely chopped
- 1 tablespoon freshly squeezed lime or lemon juice
- 4 large flour tortillas
- 1 teaspoon cooking oil olive, avocado, or neutral oil
Prepare the Filling: In a medium-sized bowl, combine the cooked chicken, diced avocado, shredded cheese, sour cream (or mayo), chopped cilantro, and lime juice. Stir gently until the ingredients are evenly distributed, taking care not to mash the avocado too much.
Assemble the Wraps: Place one tortilla on a clean surface or cutting board. Spoon one-fourth of the chicken-avocado mixture into the center of the tortilla. Fold in the sides, then roll tightly from the bottom to form a secure wrap. Repeat the process with the remaining tortillas and filling.
Crisp the Wraps: Heat 1 teaspoon of oil in a large skillet or griddle over medium-high heat. Once hot, place the wraps seam-side down in the pan (work in batches if needed). Cook for 1–2 minutes per side, or until the exterior is golden brown and crisp. Flip carefully to avoid unwrapping.
Serve and Enjoy: Transfer the wraps to a cutting board. Slice in half diagonally if desired, and serve warm with extra sauce, salsa, or a green salad on the side.
- Chicken Options: Rotisserie chicken works great for convenience, but grilled or leftover baked chicken is also perfect.
- Cheese Variations: Try pepper jack for a spicy kick, or keep it mild with mozzarella.
- Make it Lighter: Use Greek yogurt instead of sour cream or mayo for added protein and fewer calories.
- Tortilla Tip: To make wrapping easier, warm the tortillas for 10 seconds in the microwave to make them more pliable.
