Ingredients
  

  • 2 English cucumbers
  • 2 tablespoons mayonnaise
  • ½ cup microgreens such as alfalfa or radish sprouts
  • 6 slices deli roast beef
  • 6 slices deli turkey breast
  • 6 slices pastrami
  • 2 teaspoons mustard Dijon or yellow
  • ½ cup cherry tomatoes cut in halves
  • 6 slices provolone cheese
  • teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste

Instructions
 

  • Prepare the Cucumber Bases: Wash the cucumbers thoroughly. Slice each cucumber lengthwise into halves. Using a small spoon, carefully scoop out the soft seeds and watery pulp, leaving the cucumber halves mostly intact but hollowed enough to hold the fillings. Lightly sprinkle salt and pepper evenly over the inner surfaces of the cucumber halves to season.
  • Build the First Layer: Spread a generous layer of mayonnaise on the inner side of one cucumber half. Next, evenly distribute the microgreens on top of the mayo. Layer the roast beef, turkey breast, and pastrami slices over the greens, creating a savory and protein-rich foundation.
  • Assemble the Second Layer: On the matching cucumber half, spread the mustard evenly. Arrange the halved cherry tomatoes over the mustard, then layer the provolone cheese slices on top. This side provides a fresh, tangy contrast to the meaty first half.
  • Combine and Slice: Gently press the two cucumber halves together, aligning them carefully to avoid squishing the fillings. Using a sharp knife, slice the combined cucumber “sandwich” crosswise into bite-sized medallions. Add a sprinkle of black pepper on top for an extra touch of flavor.
  • Serve or Store: Serve immediately to enjoy the fresh crunch, or place the sandwiches in an airtight container and refrigerate. They will keep well for 3 to 4 days but are best eaten fresh for maximum crispness.

Notes

  • Avoid Freezing: Due to the high water content, freezing will cause the cucumbers to become soggy and lose texture upon thawing.
  • Customize Your Fillings: Feel free to swap the deli meats or cheese for your favorites, such as smoked salmon or a dairy-free cheese alternative.
