Ingredients
  

  • 1 piece flatbread or substitute with flour tortilla or pita bread
  • tablespoons red pepper paste
  • 2 large baby gem lettuce leaves or any preferred salad greens
  • ½ large tomato thinly sliced
  • 4 cucumber slices
  • 4 small baby beets pickled or fresh, halved or sliced if large
  • 3 falafel balls homemade or store-bought
  • ½ slice vegan feta cheese optional
  • 3 teaspoons tahini dressing

Instructions
 

  • Warm the Flatbread: Begin by gently heating your flatbread in a dry skillet over medium heat. You can brush the pan with a tiny amount of oil if preferred. Heat it just enough to become soft and pliable—avoid making it crispy. Alternatively, you may warm the bread in an oven, under a broiler, or in an air fryer set to a low temperature for a few minutes.
  • Heat the Falafel: While warming the bread, simultaneously heat the falafel. Use the same pan or air fryer for a few minutes until the falafel is hot throughout and slightly crispy on the outside, maintaining their signature texture.
  • Spread the Flavor Base: Once the flatbread is warmed, evenly spread the red pepper paste over the surface. This layer adds a subtle smoky sweetness that complements the other fresh ingredients.
  • Layer the Fresh Greens: Place the baby gem lettuce leaves or your chosen salad greens evenly on top of the paste. This adds a crisp, refreshing crunch that balances the richness of falafel and tahini.
  • Add Vegetables and Falafel: Arrange the sliced tomato, cucumber rounds, and baby beets over the greens. Then, place the warm falafel balls on top, distributing them evenly for every bite.
  • Drizzle Tahini Dressing: Generously drizzle tahini dressing over the assembled ingredients, bringing creamy, nutty flavor and moisture to the wrap.
  • Optional Vegan Feta Addition: If desired, crumble the vegan feta over the wrap for a tangy, creamy contrast. This step is optional but recommended for an extra flavor boost.
  • Wrap and Serve: Carefully fold or roll the flatbread to enclose the fillings. Grab a napkin, hold the wrap firmly, and enjoy this vibrant, satisfying meal!

Notes

  • Feel free to swap the red pepper paste for alternatives like olive tapenade, traditional pesto, red pesto, tomato puree, or classic hummus to vary the flavor profile.
  • Both homemade and store-bought falafel work well—choose based on your time and preference.
  • To reduce calories or keep it lighter, omit the vegan feta without compromising the wrap’s core deliciousness.
