Ingredients
  

  • 2 small cauliflower heads trimmed and separated into small florets
  • 2 cups low-sodium chicken broth or vegetable broth for vegetarian option
  • ¼ cup finely grated Parmesan cheese
  • ¼ cup fresh chives chopped
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Prepare the Cauliflower: Start by washing the cauliflower heads thoroughly. Remove the outer leaves and core, then cut the cauliflower into bite-sized florets for even cooking.
  • Cook Cauliflower in Broth: Place the cauliflower florets in a medium-sized saucepan and pour in the chicken broth. Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan with a lid, and simmer for 15 to 20 minutes, or until the cauliflower is tender but still holds its shape.
  • Drain and Puree the Cauliflower: Using a slotted spoon, carefully lift the cooked cauliflower out of the broth, allowing any excess liquid to drip off. Transfer the florets to a food processor. Pulse until the cauliflower reaches a smooth, creamy consistency resembling mashed potatoes.
  • Add Flavorful Finishes: Transfer the pureed cauliflower into a serving bowl. Stir in the grated Parmesan cheese and freshly chopped chives, mixing thoroughly. Season with kosher salt and freshly ground black pepper to suit your taste.
  • Serve Warm: Serve immediately while warm as a delicious, healthy side dish that pairs well with a variety of main courses.
