- 4 ripe avocados
- 2 cans 5 ounces each albacore tuna, drained
- ¼ cup creamy mayonnaise
- 1 medium celery stalk finely chopped
- 2 tablespoons finely diced red onion
- 1 to 2 tablespoons fresh herbs such as parsley, chives, or a mix, chopped
- ½ tablespoon Dijon mustard
- Salt to taste
- Freshly ground black pepper to taste
Prepare the Tuna Salad Mixture: In a medium-sized bowl, combine the drained tuna with mayonnaise, finely chopped celery, and diced red onion. Add the chopped fresh herbs and Dijon mustard. Mix everything gently but thoroughly until all ingredients are evenly incorporated. Season with salt and pepper according to your preference. Ready the Avocados: Carefully cut each avocado in half lengthwise. Twist the halves to separate and remove the pit by gently pressing and lifting it out with a spoon or your fingers. Optionally, scoop out a small amount of avocado flesh to create more room for the filling.
Stuff the Avocado Halves: Using a spoon, generously fill each avocado half with the prepared tuna salad. Press down lightly to ensure the filling is secure and evenly distributed. Arrange the stuffed avocados on a serving platter or individual plates. Serve Immediately or Chill: For the freshest taste and best texture, serve the stuffed avocados right away. If preparing in advance, cover tightly with plastic wrap and refrigerate for up to an hour before serving.
